chicken and barley soup


Ingredients
2 chicken thighs skinned & 
chopped into bite size pieces
1 carrot cut into chunks
1 onion quartered 
12 canned button mushrooms 
3 tablespoon barley 
3 teaspoon fish sauce 
pepper 

Method
Bring 1.5 litres of water to boil, add the barley, carrot & simmer for 20 minutes 
add the chicken,onion, mushrooms & simmer for another 45 minutes 
season fish sauce & pepper, garnish, with chopped spring onion.
