Jicama and chicken stew

Ingredients 
2 thighs cut into chunks
1 small jicama peeled and sliced 
6 dried shiitake mushrooms 
soaked in water until soft
1 tomato peeled and chopped finely
1 small  piece ginger chopped finely
2 shallots chopped finely 
1 tablespoon hot bean paste
1 teaspoon soy sauce
half teaspoon sugar

Method 
Heat two tablespoon of oil in a pot & brown the ginger & shallots. add the chopped tomatoes & hot bean paste.. then sear the chicken. pour in 125ml water and bring to boil. add the jicama and Shiitake mushrooms.season with soy sauce and sugar. simmer for 30 minutes. serve with hot rice.
