Broccoli and beef


Ingredients
1, stalk of broccoli cut into small florets
300g finely sliced beef 
1 clove garlic, chopped 
2 slice fresh ginger chopped, 
1 small piece pressed tofu 
2 table spoon teriyaki sauce 
1 teaspoon sugar, 
1 tablespoon cognac . 


Method
Parboil the broccoli until soft and set aside.
Cut the pressed tofu into small cubes & fry them until crisp, these are to be used as croutons marinate the beef with a little soy sauce & lots of pepper, a little cornflour is added to render the beef tender & smooth, heat 2, tablespoon of oil in a wok & fry the chopped, garlic & ginger fragrant, add the beef searing the meat till it is slightly browned without lowering the heat, add the cognac followed by the teriyaki sauce & sugar, pour a little water to moisten the dish, add the broccoli & stir-fry till the vegetable & heated through top with tofu croutons and serve.
